Recipe Story
Shared by Matthew Ingram. These pancakes are cooked on a buttered and oiled griddle, with a gently mixed batter that stays a little lumpy.
Ingredients
Dry ingredients
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
Wet ingredients
- 3/4 cup milk
- 1 tablespoon oil
- 1 teaspoon vanilla extract
- 1 tablespoon apple cider vinegar
- 1 large egg
For the griddle
- A generous amount of butter and additional oil, as needed
Instructions
- Mix all the dry ingredients in a bowl.
- Mix all the wet ingredients in a separate bowl.
- Combine the wet and dry ingredients. Mix just until mostly incorporated; the batter will still be lumpy. Do not overmix.
- Preheat a griddle, then add a generous amount of butter and oil, allowing the butter to melt.
- Using a large serving spoon, scoop the batter onto the preheated griddle.
- Flip once bubbles start to appear through the pancakes, then cook the other side until golden and cooked through.
Recipe Summary
Keep the batter a little lumpy and avoid overmixing. Watch for bubbles to appear before flipping.
